A Family Winery

Nighthawk Vineyards is a boutique family farm gate winery, overlooking the scenic Green Lake valley above Okanagan Falls. It is truly a magical destination, with a distinctive terroir that contributes to some of the finest grape growing conditions.

Nighthawk Vineyards is a dream come true for Daniel and Christy Bibby, along with their sons Dakota and Carson.Dakota is the winemaker. The winery is named after the majestic birds found in the valley. The unique micro-climate of Okanagan Falls provides a rare habitat perfectly suited to these majestic birds, and some of the valley’s best grape growing conditions.

Carson is chef at their new onsite eatery that features wood-fire pizzas. Carson is a graduate of the Culinary Arts program at Okanagan College, and while he was attending school he spent two seasons at Liquidity Bistro (listed in the Top 100 restaurants in Canada) working under Chef Rob Walker.

Immersing himself in the wine industry at a very young age, Dakota graduated from both the Viticulture and Winery Assistant programs at Okanagan College. He then spent the next six years working with local wineries of different sizes to round out his experience and wine making skills. Prior to taking over the full-time role in his family winery, Dakota spent a season with the renowned team at Stag’s Hollow in Okanagan Falls. Under winemaker Keira LeFranc, he refined his skills and the confidence to take Nighthawk Vineyards to the next level. After completing a beekeeping program, Dakota will now be tending bees on the estate as well as grapevines with plans to make honey and perhaps a mead in future.
